Left- Jelly Kinabalu: Blue layer (the sky) of natural blue dye from bunga telang (clitoria flower), white layer (the clouds) of coconut milk, green layer (the padi/rice fields) of pandan leaves and brown layer (the rich land) of sago pearls in gula melaka/palm sugar.
Right- Traffic Cone Jelly: Alternating layers of pure fresh mandarin orange juice jelly and evaporated milk, ending with a gorgeous layer of mango puree and mango cubes cream jelly sitting on half a mandarin orange.
Left- Mt Purple: Coconut milk-flavoured Japanese snow jelly for the snowy peaks and ajar jelly made with liquid from boiling a beautiful sweet purple potato with sugar for the rest of the mountain, surrounded by shaved ice, potato cubes and doused with fresh coconut milk.
Right- Dragons Eyeball Jelly In Cantonese Chinese, the fruit longan ("loong ngan") translates to 'eyes of the dragon' and it's obvious why. Under the translucent flesh of the longan is a hard, shiny black seed that looks like the pupil of the eye.
